BLACK ITRANA GAETA OLIVES

The production area is limited to the province of Latina. The "Itrana" olive cultivar perfectly suits for both table consumption and oil production.

The olives are harvested between March and April when they are fully ripe and have a bright purplish-brown color. The repeated immersion in brines of different gradations gives these olives their unmistakable, tantalizing, and slightly vinegary flavor.

Famous since the 1400s thanks to the export of Gaeta oil throughout the Mediterranean, it was already described by Virgil in his poem Aeneid.
